Pickling spice blend

Home pickles made easy.
This is a mix that The Spiceworks has put together over the years and find that it produces an excellent flavour to our assorted pickled goods.
A really good addition to the spice shelf.
Ingredients: Coriander Seed, Yellow Mustard, Chillies, Ginger, Cloves, Black Peppercorns, Allspice Berries, Bay Leaves, Cassia Bark.
Use this for an extra ‘zing’ in your next batch of pickling. The flavours work superbly together.
Pickling spice not only adds characteristic flavour to pickles, it adds complex flavour to braised meats, stews, beans and rice dishes.
Quantity:
For general use we recommend that you use 1 heaped TABLEspoon per 1 pint of Vinegar.
This amount can be increased to 2 heaped Tablespoons per 1 pint of Vinegar for a deeper flavour.
If you prefer to use a sachet-type infusion, please follow the instructions given below.
To infuse recipes with the multi-dimensional taste of this blend, create a sachet by placing the required amount of pickling spice in the centre of a piece of Muslin/cheesecloth or a coffee filter and tying it tightly with a long piece of string.
Leave a few inches of extra string on the bundle so it’s easy to remove after cooking.
Drop the flavour sachet into the pot and enjoy the distinctive taste and aroma this blend provides. Method:
Place required quantity of Vinegar in a pan.
Add the requeired quantity of Pickling spice.
Bring to the boil and stir.
Reduce heat and simmer for 5 minutes while continuing to stir.
Remove from heat and allow to cool overnight.
Strain and use as per your pickling recipe.
